Remember when you were a kid and your parents told you that you needed to eat your vegetables so you could grow up strong and healthy. It still is true that you need to eat your vegetables, the only difference is you don't have to have the same old boring vegetables you had when growing up and neither do your kids. Just a little Zen-Sational will make the flavors POP and cause a new love for your veggies.
This year I came across a recipe for pickled sugar snap peas that caught my fancy. I adapted it with what I had on hand. The description said it was the best way to preserve the fresh flavor of this vegetable which has such a short season, second only to eating them fresh. They're still brining so I can't weigh in, but maybe you'd like to give it a try while peas are still at the farmers market.
